If you want a step up from the same old coleslaw, you must try this celery root salad recipe. Shredded celery root has a mild sweet flavor and is perfect raw, no need to blanch, just let the dressing soak for an hour or overnight. This Polish salad is delicious as a side dish, served on a bed of lettuce leaves, or as an accompaniment to Polish Pierogi.
Tips: If you can't find celery root, you can substitute for parsley root. Also, the best way to make this is in a food processor -- much easier than having to manually shred and chop (and much faster).
Celery Root SALAD INGREDIENTS

1. Toss shredded celery root, onion, and apples together.
2. In a small bowl, mix all dressing ingredients and season with salt and pepper. Pour over celery root mixture and toss evenly.
3. Cover and refrigerate for a minimum of one hour.
4. Toss again and taste for flavor. This is the tricky part, depending on the size of the celery roots you used, you may need to add either vinegar or olive oil. If dry, add olive oil and if it still needs a little kick, add vinegar.
5. Served chilled.
