Polish Leek Salad Recipe

When people think of Polish recipes, they typically think of heart warming winter meals.  However, the Poles have some surprisingly fresh recipes for a BBQ on a hot summer day like this Polish Leek Salad recipe.  Find some fresh organic leeks from your local farmer's market and some tart apples to make this Polish recipe burst with texture and flavor.  You can also make the leek salad a day in advance and let it sit over-night; it tastes even better the next day.  Also, if you are looking for a leek salad recipe that has no yogurt or dairy, try this Polish leek salad recipe.

Leek Salad Recipe (Salatka z Porow)

Polish Leek Salad Recipe

  • 2 large leeks, finely chopped
  • 2 tart apples, grated
  • Juice of 1 lemon
  • 3/4 cup plain yogurt
  • 1/4 teaspoon salt
  • 1 tablespoon honey
  • 1  tablespoon Dijon mustard
  • Fresh pepper to taste
  • 2 tablespoons roasted chopped walnuts



1.  Wash thoroughly and thinly slice the leeks, using the white part (and a little of the softer green part of the leek).  Peel and core the apples, then slice thinly or grate.

2.  Toss all ingredients in a large serving bowl.  Season to taste.

3.  Roast walnuts in the oven for a few minutes on high till they brown.  Be careful not to burn them.  Take them out, let them cool, chop and toss in salad.

4.  Let stand in a cool place for about an hour to allow flavors to blend together, or chill over night in refrigerator.
