Polish Tomato Salad Recipe

Everyone loves tomatoes in the summer time.  That is why you can find many versions of Polish tomato salad recipes in cookbooks.  Below is a simple Polish salad recipe Tomek made since he had lots of fresh green onions and tomatoes from the farmers market.  Enjoy over toasted bread, with crackers, or over a bed of lettuce.

Polish Tomato Salad Recipe

  • 4-5 cups of chopped heirloom tomatoes
  • 3-4 cups of green onions
  • 3-4 tablespoons chopped fresh basil
  • 1/2 to 1 cup sour cream
  • 1/4 teaspoon cayenne pepper
  • salt & LOTS of fresh pepper to taste



1.  Chop green onion and tomatoes and add salt.  Stir and let sit while you prepare the rest.  Do not discard tomato juice.

2.  Chop basil (can use dried basil if you do not have fresh).  Add rest of ingredients and combine all together in sour cream (or mix 50/50 with Greek yogurt, but not too much yogurt since the flavor comes from the sour cream).

3.  Test for flavor.  Notice that the sour cream dilutes the pepper, so you may need to add more. 

4.  Spread over toasted bread or lettuce and garnish with parsley.  Even better, serve as a side to a hot plate of Polish pierogi.
